4 slices of ham 100g
1 large red onion (300g), sliced thinly 170g asparagus, trimmed, halved lengthways
8 egg whites
1 cup (250ml ) buttermilk
1 Preheat oven to moderate, oil deep 19cm-square cake pan; line base and sides with baking paper.
2 Cook ham, stirring, in a small heated non-stick frying pan until crisp. Add onion to the same pan; cook stirring until soft. Layer ham, onion and asparagus in prepared pan.
3 Whisk egg white and buttermilk in a medium jug; pour into pan. Bake, uncovered, in moderate oven about 35 minutes or until frittata is set. Stand covered 10 minutes before cutting into squares.
